Our chef Tom Hitoshi curates a selection of fish in sushi courses for our guests. Sushi One uses only the highest qu lity, wild-caught, seasonal fish for our Omakase selections hand-picked by chef Hitoshi every morning. We invite you to “leave it up to” chef Hitoshi to provide you with a memorable and delectable assortment of sushi you will never forget.
Meet Chef Tom
Hi! My name is Tom. Born and raised in Glendale, I have been making sushi for sixteen years. My philosophy is simple, keep it as minimal as possible. I honor the old school techniques passed down for generations. All the fish has its own taste. My philosophy is to enjoy the taste of the fish. Nothing else.
Meet Chef Mike
Hello! My name is Mike. Born and raised in Torrance, I have been making sushi for 5 years. I welcome to you Sushi One, where we pride ourselves on our art and our love of the human to human experience. I take an education approach to your dining experience. Knowing more about the fish we select often enhances the flavors in your every bite.

Hi! I am Gen. Born and raised in Tokyo, I have been making sushi for 3 years. Like my colleagues, I welcome you and invite you to enjoy Sushi One’s unforgettable dining experience. We all put our heart and passion into our art, our food. It would be an honor to share it with you.
